  • This is my favorite challenge of the 3 so far. When I start thinking about getting in all the main food groups, everything starts to fall into place nutritionally and calorically - my fiber goes up, satiety, and the quantity I eat overall decreases - and my wallet gets happier too. I made a white chicken chili this week and have had 5 servings throughout the week and have 4 servings left frozen, making each portion less than 4 bucks AND I doordashed the ingredients so it would be even less expensive normally. I LOVE chili season and white chicken chili is a great way to kick it off!

    I don't use cream cheese in mine. Instead, I grill up a pound of chicken and shred it, then grill up an onion and garlic, and add in chicken stock, sour cream, 2 cans of great northern beans, 2 can black beans, 2 cans corn, and 2 cans green hatch chilis. Add less chilies for less kick. Then I add spices - paprika, cayenne, cumin, oregano, salt and lots of black pepper. Finish off either a small block of white cheddar.

    This huge batch made 9 giant servings. As far as number of veggie servings per bowl of chili, I'd say it's between 2-3 in one meal!
