  • Carrie’s breakfast bake

    *handful of raisins
    *one package matchstick carrots

    Cover raisins with water, top with carrots, cover, microwave for a couple of minutes, let stand to soften

    While that is going, combine in a mixing bowl:

    *2 ripe bananas
    *1 c coconut milk
    *6 eggs
    *can of crushed pineapple, drained
    *1 T pumpkin pie spice
    *bloop of vanilla
    *1 tsp salt

    Drain carrots/raisins and combine with other ingredients. Pour into greased 9x13 pan and bake at 350° for 40 minutes. If desired, sprinkle top generously with brown sugar and broil.

    Serve hot or cold with whipped cream cheese. 8 servings

? Truth be told, I don’t measure the salt or the pumpkin pie spice either. And the size of can of pineapple also doesn’t really matter (I use a big one).
