I did make it! I made broth with a leftover rotisserie chicken in my instant pot with 9 cups of water and 2 tsps salt. I let it cook for 30 minutes at high pressure and then let it sit for 30 minutes before opening the pot. I strained the broth and then got the meat that was left off the chicken, it was mostly dark meat.

Then I used 2 Tbs olive oil to saute 1 diced onion, 3 diced carrots, and 3 diced celery sticks for about 10-20 minutes (I like my vegetables super soft so I do this, but you can just saute for 5-10 minutes). Then i added 2 garlic cubes (frozen) and 1 ginger cube (frozen)Then I added the broth, brought it to a boil
for 10 minutes, then added the 8 oz noodles and leftover chicken. Let the noodles cook and at the very end I added 2 packed cups of spinach and about 2Tbs each of green onions and cilantro. I chopped the spinach before adding but you don't have to. Taste for salt and pepper at the end
