I often like a big salad with homemade cashew dressing (you can thin it down as much as you want, or even use canned white beans instead of cashews. Blend with some water, onion & garlic powder, mustard, vinegar or lemon juice). Low-fat protein add-ins: cottage cheese, beans, hummus, dinner leftovers, whatever's on hand. I sometimes add fruit, like chopped apples. If I need more calories, some toasted whole grain bread or pita, with hummus. I found some whole wheat pita bread at Trader Joe's the other day (their own brand) with pretty natural ingredients. Yay. Or I'll just make a sandwich with the salad ingredients.
