  • This childhood favorite is one of my meal prep staples. I make a big batch on the weekend and it stores well through the week. I enjoy it on everything from sautéed greens to eggs!

Hi Sharon! Yes :) I just eyeball the proportions, but basically you sauté some onion in olive oil until it starts to soften, then add some chopped garlic and bell pepper. Let those soften a bit and then add the beans. I used just black beans here, but a mix is nice too. Then add salt, pepper, vinegar, and spices to taste (I used just cayenne pepper, but my mom always used cumin too). I also like some coconut aminos for sweetness, but monkfruit or sweet potatoes would work too. It’s very cozy and comforting!
