  • Another amazing Mediterranean diet inspired ‘bowl’. There is 1/3 cup of the following : chickpeas sautéed with olive oil and turmeric, sautéed kale with cherry tomatoes, brown rice medley, raw cherry tomatoes, 1 Persian cucumber, roasted broccoli with a sprinkle of parmesan cheese, chopped apple, and pickled red onions! I came close to finish, it is a ton of food…16g of protein 7g of fiber, and 512 calories for this amazing post workout meal. 💪????

  • I am re-newly plant-based and trying to focus this Dietbet on getting my veggies in with the starches such as rice, beans, and potato’s that I normally eat. Here is a pic of the rice and Brussels Sprouts that I made today. It was really good. Yesterday I made a broccoli and rice bowl that was also delicious.

I've been obsessed with Brussels Sprouts recently. Made them multiple times over the holidays using the simplest instructions. Literally just 3 tablespoons olive oil, 1 tablespoon water, and salt/pepper to taste... sliced in half, flat side down on the sheet pan. Cooked COVERED with foil for 10 minutes at 500 degrees (this steams them), then UNCOVERED for another 10 minutes at 500 degrees (to bake them). Done. They're so good!
