  • This was my meal prep for the week: spaghetti squash, zoodles, plain and spicy Mexican-style cauliflower rice (the Mexican-style one is a new product at Trader Joe’s and SO good), Kevin’s cilantro lime chicken (perfect with the rice and 1-2 tbsp sour cream), ground turkey and some plain grilled chicken to throw on a salad.
    I like to prep things that I can throw together quickly, mix and match, etc. Happy Monday!
