Stop starting at the scale - rely solely on how you feel, how your clothes are fitting, and take measurements!!
Screw the Scale - Inches is where it's at! This will most likely be my last diet bet, doing these bets have really changed how I see the scale; chasing that Big number at the top is not healthy and I need to focus more on how I feel instead of being discouraged because I'm up 5 pounds since I started.

I need some inspiration to get a grip on my appetite. I eat fairly healthy, lots of veggies from my garden. But I don't seem to stop after one serving. Does anyone have any hacks or advice that might help me get a grip?

I feel the same way alot. For me it's more of a mental thing, I just need a pinch more. If you have to have it. Go back and only put a few bites worth on your plate. Not the full serving. Also make sure you have fresh fruit in your house, something you can nosh on while your brain and your stomach talk. ( favorite are grapes).
The other thing you can try is shortly before dinner, drink a full glass of water or a protein shake to trick your brain into thinking there's already plenty in your stomach so you don't feel like you need to eat more. (This usually seems to work for me)
