  • Had to run into the store quickly today and managed to grab some salad kits for the week and fresh veggies! Nothing too crazy, but having healthy options in our home & saving where we can has helped my husband and I so much on our journey. We love salad kits we can just add our protein with. Salad kits are great flavor combo inspirations, but I don’t always buy them or use all of the toppings. I will add more lettuce, thin out the dressing with a bit of water and not use it all.

Salad kits with bare nuggs are my go to meal as a busy mom. I usually divide the bag of salad in half as a full bag is usually too much for me. I’ll add some of the salad/bare nuggets mix to a low carb tortilla.

  • Here is a healthy dish from yesterday :
    I’m visiting my sister for the week, and yesterday I went to see my niece at grad school (University of Pennsylvania).
    We found a wonderful farm to table restaurant. We ordered this fall harvest salad(Roasted Broccoli, Cauliflower, Apples, Craisins, Pepitas, Walnuts, Blue Cheese, Local Greens, Maple-Dijon Vinaigrette)
    It was delightful!
    Otherwise, my fruits and veggies have been basic, mostly raw veggies that I can eat in the car while driving.

I buy the beef jerky from Costco . I love almonds and nuts but I try to use it for garnish since it’s so caloric and not that filling if I have only 10 almonds .

I keep it simple since I don’t cook a ton. Greek yogurt or cottage cheese with seasonings as a veggie dip, or with fruit .
Hard boiled egg with a slice of cheese or hummus.
Protein powder made into a dip for fruit

  • One of my go to snacks lately: pb powder mixed with water & apples! I also like to add it to my Greek yogurt sometimes, yum! Peanut butter is one of my favorite things so this is easier to fit into my calories and have in different ways. Whats your favorite healthy snack?

I use to love pb2 and used it in greek yogurt! The.n I became allergic to peanuts :I
I like snack breads with laughing cow cheese and fruits . Plain Greek yogurt with high fibre high protein cereals and fruit

Greek yogurt or cottage cheese with some dry seasonings, like ranch or dill mix to make a veggie dip.
Veg with hummus
Hard boiled eggs and slice of cheese
Basic things that are easy to grab, I don’t make a lot of recipes
